dried eggs

Read a post recently mentioning dried eggs. I remember getting a big can of it years ago when I started backpacking; good, cheap, easy to fix protein. Cant seen to find it these days. Any Ideas?

check out Walton Grains and or Foods on the Net.  they're from Idaho, - Montpilier I believe.

But I've seen Emergency Essentials out of Provo, Utah advertise dried eggs in #10 cans as well as cheese powder, powdered butter, and all kinds of flour, pancake mix, dried fruits or vegies, and dried meats.

Two big names to google are "Mountain House" and Provident Pantry."

I dehydrate eggs with my dehydrator. Use the fruit roll sheet and it will hold 6 eggs. I beat the eggs as if I were going to make an omlette, but don't add any milk, water , or spices.  After about 18 hours of drying, they're dry and brittle.  I break them into pieces and dry them some more.  They can't get too dry.  I powder them with a coffee grinder, but a blender or food processor will work just as well. The egg powder goes into ziplock baggies and in the cupboard.  I've used eggs that I've dehydrated this way for omlettes and cooking, with no problems. To rehydrate for use, I mix two measures of water for each measure of powder.

Walton Feeds out of Montpelier, ID are great people to do business with. I order for local pick up because I'm fairly close, and I get out that way a few times a year. They have different size cans and bulk packs for your needs, and they run specials. Special right now is powdered chedder cheese in different size cans. They have alot of different stuff and its all good!
