pickled egggs
« on: February 12, 2010, 11:28:31 AM »
We went into a amish store yesterday and bought some pickled eggs. MY question is can I boil more eggs and put them into the the jar and reuse the juice to pickle more?

I have found that the pickle can be used a time or two. Bring it to a boil before using it.  I have also found that the juice from pickled beet and sweet pickles makes a tasty pickle for eggs.

Usually though, I use cider vinegar, mustard powder, garlic, some black pepper, and a handful of pickling spice.

there are probably more recipes for eggs than you could possibly imagine but +1 on the boil. with my hens putting down so many eggs I've been able to tinker a little bit with what goes in but I keep going back to my favorite- sliced red onion in the bottom of a gal. glass jar, cider vinegar, garlic, pickling spices, black pepper to a boil, and let them set for about 2 weeks in the fridge before digging in( yea, right) haven't tried any mustard but will on my next batch

They make GREAT egg salad!

We usually have to make two batches, my wife likes the red, kinda sweet ones.  I like the more earthy, spicier ones.
If I'm doing a lot, I;ll sometimes go to Cash & Carry and buy a box of 5 dozen boiled, peeled eggs.
