Heart healthy sausage?

I have been thinking of an experimental recipe. My Dad and I love to make different types of sausage out of the game that we take. We use all kinds of recipes off the net for our meals. Most of those call for an addition of some sort of filler such as a fat, ground pork or beef.

The other day, I bought some golden flax seed meal for some baking. I looked at the label and I found out that it can be used as a replacement for shortening in baking recipes. I made some cookies out of the meal and they taste really great.

I was thinking," What if I did a little experiment? " " What if I take the meal and mix it at a 1:1 ratio to see if it would be a good replacement for lard, beef suet , ground pork or ground beef?"

I plan to take a cup of meal and a cup of ground venison and mix it thoroughly with some spices and make a test batch of breakfast patties.

Anyone care to hazard a guess as to how this will turn out?

I have no idea how it will turn out.  Most attempts to make something like sausage healthy are failures in the taste dept.  Please let us know.  I am no great fan of ingesting large amounts of porkfat.  Sure is tasty, though.

I heard that pig fat was a healthy alternative to pork fat without losing any of the flavor, anyone else hear this??   ;)
