In the days of my youth we had a cabin on the river and spent most weekends and most of dad's vacations there fishing. We had both trotlines and baskets in and caught hughe quantities of catfish. We used those cardboard milk cartons that milk came in back in those days and put the fish and filets into the them filled them with water and froze them. Seem to work as well to prevent freezer burn as anything else I've seen. Air is the enemy of frozen foods.

Just take out of frezzer put  bag in kitchen sink and let thaw,do not defrost in microwave it will cook the meat some, just let thaw on its own in the sink

like Backstrap, I usually put mine in a gallon bag, fill with water and freeze. To thaw, I set the bag in a bowl in the refrigerator.

Another way I like is to dip the fillet in ice water, freeze, then repeat the process until a glaze of ice builds up. Takes a little time, but more convienient if you are only going to cook one or two pieces.

I use to just take a gal milk jug..clean it out real good, cut the top so it kinda has a flap, put enough fillets in it to go about half way up the jug then fill the jug with water making sure all the fillets are underwater then put it in the deep freezer..they would keep reall well like that. but now I have one of them fancy vaccum sealers and that does an excellent job...great way to keep cut bait as well.
