Can someone explain to me the difference in how a soft point varmint bullet acts on impact vs. a bullet like a v-max?

A Hornady V-max bullet is a varmint bullet. Varmint bullets tend to expand (defragment) very quickly on impact since they are intended for smaller targets. They will not penetrate adequately when used on larger animals such as deer or pigs.
