Oven bags and injector syringes...

This isn't a recipe per say, but I have been trying some things and wanted to share... I have been doing venison loins in oven bags, and since my wife brought home one of those syringe needles to inject marinade into the meat, I have been trying that too... I am absolutely in love. After years and years of trying to get tender venison, this works just great... and I love the flavor of the injected juice... This is probably no great revelation to most of you, but it's new to me....  and by the way, to those of you who gave me advice on how to do my wild boar ribs, a HUGE THANK YOU as well... I finally have them tender too... Now, if I can just keep off that 51 pounds I lost in the past 22 months...  :D

I've used oven bags for years and used an injector for awhile....but quit using it because I kept getting squirted with marinade-usually ketchup based or such and you know what that does to your clothes.

I was watching the Outdoor Life Network a couple of weeks ago and the guy who runs the Cajun Marinade company was on.

He said the biggest complaint people had about the needles was the marinade squirting on them, then gave us the answer to the problem.

Saran Wrap or equivalent.  Just wrap the meat in that once, and inject away.....sure made me feel stupid for not thinking of it.

We've been using different marinades over the years,to tenderize wild meat,both commercial and homemade recipes.Some were good,others not.Last year however,while camping with friends,they brought out some meat that was super tender and tasted great.It had been left in the simplest marinade and we've used it exclusively since then to marinate moose and elk and whatever else.It consists of adding soy sauce to vegtable cooking oil and then crushing some fresh garlic into it.That's it.We don't have to inject it but then we often leave the meat in the marinade for a week after bringing it out of the freezer before we cook it.
