summer sausage and bacon

Hi : was asking a friend whose property is overrun with hogs if he would be interested in cleaning up a few by allowing a few folks to take em out..he indicated he thought that the hogs would not taste good as it is too hot now to kill them and keep the meat..
what say you hog hunters...
I want to kill them but would not want to waste the meat.

It's like anything else. If you have enough coolers with ice to cool the meat and keep it cool until it's processed, it's no different than taking them in the winter, plus they've probably put a little fat on from the spring.

or take to a processing plant to cool.
