Dressing for the weather

OK, I can handle the cold weather and I can handle the warm weather.  It's the in-between weather that I just can't figure out how to dress for.  Spring and fall, the best hunting seasons, always throw me for a loop.  Cold mornings and warm afternoon.  Do you just dress for the cold and gut it out, shed layers, or do these new Under Armor type fabrics help manage the differential temps?
