Grouse Recipe

Anybody have any good grouse recipes?  My results have been less than satisfactory thus far.

I am very happy with my deer camp fried grouse.   The only thing that I cook is the breast.  I keep it simple and coat the breast in egg, shake it in a bag of flour, salt, and pepper.   I then fry it in hot cooking oil.

I normally dress and cool the birds soon after the kill.
There is a learning process to effectively using a gps.  Do not throw your compass and map away!

I have an Idea for them.get a food grade bucket.put burgandy in it and yer favorite spices.soak byrds.wrap a slice of thick cut pepperd bacon around each byrd.light yer grill and you better not be using a gas one fer this.soak some sweet wood and throw on them coals and grill them byrds.make ya a pot of wild rice.and a lettuce mater salad(do I have to say put lots a fresh chopped garlic on yer salad?)make sure ya make a pitcher of martinis before you put em on the grill.so you can keep hydrated during the charring of the flesh.remeber when ya serve em that presantation helps the palet

we usually just put it in a pan with rice and water and salt and chicken broth, bake it.  good and simple

I would suggest you clean the birds as soon as you find them if you don't do that already. Stuffing them in a game bag and cleaning them a couple of hours later when you get back to camp is going to hurt the flavor. If I am going to have them in camp I take the breast and slice it in to strips. Fry them in butter and sprinkle some canned parmesan cheese over it.

We carried a Mirror 6qt pressure cooker with us when we went on hunting trips to make single pot meals like chicken & dumplings,stew,soups,chili,pot roast,etc .We always had Johnny's Lamb & Game Seasoning from www.johnnysfinefoods.com .When I'd shoot a grouse I'd skin it & gut it,wash out the cavity and cool it down.When we're ready for dinner I'd quarter it and sprinkle it with Johnny's Lamb & Game Seasoning then add some oil to the pressure cooker and brown the bird,next we added the required amount of liquid,placed the top on the cooker,turned on the gas and placed the pressure cap on the lid & cooked it for about 15 minutes under pressure.Makes the best tasting tender grouse and if one uses some flour and corn starch a great gravy to serve on potatoes.

I stuff one or two or more grouse breasts inside a large roasting chicken and pop them in the oven for a couple hours. Comes out moist and Delicious.
