OK,
I am way late on putting in this post, but:
1. The 7mm-08 is way to big for varmints that are woodchuck (groundhog) size or smaller. It is only a shade in size smaller than the .308 Winchester, and at longer range, actually packs more punch than a .308 Win. It was never intended or marketed as a combo-cartridge, for the simple fact that is isn't. It was invented and developed by long range steel sillouette shooters, and then to everyone's surprise, it proved to be a remarkable deer killer. Word of mouth spread among deer hunters, and it was through deer hunters that this cartridge emerged in the general market and thrived.
My advice? Sell your .243, and get a 7mm-08 for deer and .22 Hornet for varmints. It is a great groundhog round out to 150 yards, very accurate, and relatively low noise.
2. In the western part of Virginia, woodchuck is standard eating fare. They are very good if they are young. The big older ones are very tough. Woodchuck Merango is a classic southern dish. They are much better than squirrel, in that they live mainly on soft grasses and grain. And, unlike squirrel, when skinned, they do not look like rats!
