I planted 5 hills of butternut squash...
it was a good year for squash
so I was looking for a recipe and was given this on a bicycle forum
1 large butternut squash peeled deseeded and cubed (I use a 2 quart crock pot full)
1/4 stick of butter
1/2 teaspon of roasted garlic more or less to taste
1/4 cup water
1 small onion
put all this in the crockpot and cook till squash is soft
with hand blender puree the squash
add
1 to 1 1/2 cups of chicken broth
salt, pepper and celery salt to taste
top with shredded mozzarella cheese
I ended up with about forty nice butternut squash plus the little ones
I got about the same from 5 hills of spaghetti squash too
