I took out a whole but small doe hind quarter on Friday and thawed it. I marinated it in red wine, Black Pepper, Salt, Oregano, and Basil.
I took it out of the marinade this morning seasoned it with salt and pepper and put it in the slow cooker with a sliced bulb of fennel, 2 sliced carrots, 2 sliced onions, some fresh rosemary, oregano, and Thyme. I let it cook for an hour and added some red wine and a 1/2 cup of beef broth and let it cook for another hour. I then added a 1/2 cup of tomato paste and 2 cups of canned chopped tomatoes and let it cook for 3 more hours. I seasoned it with salt and pepper and served. Boy was it good.
