I'll give my 2 cents worth if it is even worth that,  But I would look at the barrel first and see how it looks, must of them should be dark, like mine I just got, but still has good rifling.  Second would be check the numbers on the bolt, reciever to make sure they match up (not elecrostencilled), then on magazine and butt plate.  If you are into how comman that particular year and manufacturer, this is a website that will tell you, you might find a rare one if lucky.  But like I said, I am still new and have been a lot of reading myself.  Hope this helps.

If you want a long range rifle get the 91, if you want a woods gun with a 200-250 yard range get the 44.  44 is lighter and easier to carry around.  I have one that the group touches at 50 yards.  Haven't checked it at 100 yards, but can't hardly beat that.  You can get a scope mount that replaces the rear sight, but if you want to add one, you will either have to install a bent bolt, or a side mount.

If you are looking for a shooter and don't care about collector status (matching numbers, etc) you should look for the one with the best looking bore. It's common for parts to be force matched after refurb. Alot of them are counterbored due mostly to bad cleaning habits. That in itself isn't a bad thing, it's just something to look for. Generally it seems like the 91/30's are better shooters (sniper rifles were made from 91/30's). The 44's are handy to carry but seem to be finicky about whether or not the bayonet is extended. If you take the bayonet off, you may have to drift the sight to compensate. The 44's were meant to be shot with the bayo. extended. One other thing... 44's are LOUD. Either way... you are getting a very rugged and dependable weapon and the 7.62x54 round is plenty powerful.
It would be nice if you could find a M38... it's a cut down 91/30 that's the same size as the 44 but no bayonet to worry about. Check out www.7.62x54r.net. You will find out all you need to know about them.
