Pheasant Recipe

I don't know if this has been up before but I had it last week and it was awesome so here goes:

2 Pheasants, bone out the breasts and leave the thighs and legs whole.
1/2 cup pancake mix (powder)
1/2 cup sliced mushrooms
1 small onion chopped
1/2 stick butter
2 chicken bouillon cubes dissolved in 1 cup of hot water
juice from 1/2 lemon
salt and pepper to taste

roll meat in powder and brown
saute mushrooms and onions in pan
add other ingredients and return meat to pan
simmer for about one hour

That's it and it was great. If you use this recipe for chicken, cut down on the water as chicken is a lot juicier than pheasant.

Simple way to cook.  Put a whole onion in the bird then bake in oven.  When cool.
slice meat off and make a sandwich with cranberry sauce and pheasant.
Makes a real good sandwich.

 Grimjim, that looks like a great recipe If I understand it right. Did you mean the meat was boiled or cooked before rolling in the powder? I ask because you said  "return meat to pan"

Sorry, I meant after you brown the powdered meat, remove it from the pan and then cook the onions and mushrooms.

The first time my wife made it, she made the batter and dipped the pheasant in that. It was actually good because the breading came off the meat and made dumplings.
