Dutch oven
« on: June 26, 2009, 03:39:10 PM »
Well I've been playin around with my dutch ovens. Made some really good chili, and  also have cooked some chicken in it. There is a learning curve to this. My first attempt with the chicken, it didn't  cook all the way through because I didn't get the charcoal burning right.
I have a dutch oven cookbook that I'm using to help me get started. It's ok, but I'd like a cookbook that has really simple recipes in it. Just a few ingredients, throw it in the DO and cook it.

I once scared a neighbor on a hunting trip to the next county.  We camped on a friend's farm overnight and then I dug a hole and put in coals and a dutch oven with fixings for stew.  I then piled coals on the lid and buried it.  He watched it kind of like watching a madman.  When we got back in the evening and I dug it back up, he saw the sanity in my method.  Even had thirds, along with the biscuits I cooked after I dipped up the stew.

If you have never seen a Lehman's catalog, you are in for a treat.  It was the first place I thought of when you said you were looking for recipes.  They are located in the heart of Amish country in Ohio.  The store is the real thing, even with hitching rails for the Amish to park their buggies when they come to shop.  Look over this url to get started: http://www.lehmans.com/store/Kitchen___Books___Dutch_Oven_Cookbook___91808?Args= .  If you are ever in that part of Ohio, it is worth going out of your way to visit.  And Kidron is out of your way, but not too far from Akron.  Just watch out for the Amish carriages along the road.

We like taking along a dutch oven when we go camping. I keep some pole barn nails in it to keep the pan off the bottom so it won't scorch whatever we're cooking. Does a nice job on cornbread or biscuits. Sometimes to preheat it we'll scoop up some live coals and dump them inside. Saves a little time. Also fry bacon on the lid.
