Glad you finaly got some liver. I still got some from the big buck,
not as tender as the doe were I shot 1/2 the liver to shreds :'(

Here is the way I do liver. Cut the liver in 3/8" slices. Sog in a pale of water over night or rinse several time if want to eat it right away to get rid of all the free blood. Drip drain. No salt in the water.

Lay out a sheet of wax paper and spinkle on a layer of White flouer mixed with pepper no salt. Dip the liver on both sides in the pepper/flouer mix.

Fry in Olive oil and chunk of butter on both sides when the liver is done put in the sliced onions fry them brown

When you put both on a plate add salt to taste. That is my favorite way to cook game liver, deer, antelope, moose and elk.

Sliced Pheasant and goose breast is good that way too.
That is interesting as I have never liked to fry Red meat in Olive Oil I will give it a light mist when almost done.

Ever since I had my first taste of liver tortured by an Army cook it is OFF Limits for me!!

But good  "Leberwurst" is high on my yummy list

Really?It's just pork fat with a bit say at the most 20% Pork liver and lot's of spices in it. Ah the Spices is the hole reason we set sail all over the world over 250 years ago to find new spices yep they make food taste great and India was the place to find them, but they never liked the idea of using the spices with red meat, but it made are style of food that was red meat taste much better. Ya I call pork red meat as they bleed red. Jewish,  hindue, Muslim, jokes aside what's wrong with pork? & for the hindue Beef or red meat? I might have taken this too far but heck it's a animal that was too be eaten and the liver is the best part!

Nice to hear about your hunt, Tim. Any day hunting is a good day ! I just moved to NW Washington state. I took one look at the woods here, and I bought myself a Gerber machete ! I'm not sure how to hunt here in the jungle yet. I hunted mostly in NE Washington, where you can walk upright in the woods. Today I followed a deer trail here, and I had to crawl...

Welcome to my world, that's why I hunt clear cuts when hunting the wet side, I prefer to hunt the east side by a fair margin even tho I have to drive 100 miles to hunt there, but it's not open for late buck, so we only hunt this side during the late season, I live in the SW part of the state.
