summer sausage recipes

i got a new sausage stuffer and am looking for some recipies. dont really want to buy a seasoning mix already made. id like to concoct it myself from easily available spices.also where is the best place to buy the fiberous caseings?i plan on useing deer and beef burger mixed to make it.
