Years ago I remember stainless steel was either brittle or soft, would "gaul".  Some of my more recent pistol purchases have stainless parts on them, and I have not heard of any complaints about stainless recently.  The last issue I remember reading about was a guy about 7-10 years ago who had a stainless Kimber 1911 and he had gauling after 5,000 rounds and even "Used the proper stainless steel lubricant".  Apparently, stainless needed special oils.   

Will an all stainless pistol hold up as well as a blued carbon steel handgun in terms of longevity?

I have a couple of pistols with stainless slides but polimer frames and have not seen any issues with either special oils of grease being needed.  I did own a Ruger Mini 14 in stainless and put several thousand rounds through it and never saw any indication of gauling.  I also owned and AMT hardballer years ago and had no issues with galling but did have issues with function so sold it.  The only gun I ever experienced Galling with was a charles daily OU 410 ga shotgun.  The sides of the locking block started to gall during a 500 target skeet match.  I had failed to properly oil it before starting the match.
