Got any good zucchini recipes?

You know how it is with zucchinis, either the squash bugs get them and they die out or you are up to your nick in them.  This year it is the latter.  I try to keep picking them while they are small but still my counter top is covered with them and my friends have all started locking their car doors. :D
We have cooked them several ways this year.  We have sliced them thin and stir fried them in olive oil with garlic, have cut them in half and filled them a ground beef, onion and cheese mixture and sliced them thin and fried them in a tempera batter.  I am also making zucchini bread but that only uses about one cup per loaf.  We are open to suggestions.  I guess I could start cutting them in pieces and freezing them to add to soups later in the year.  If I do do I need to blanch them first?

I'm not sure where it is on here but I have tried a zucchini lasagna from here and it was excellent.  This is a great website aside from zucchini...

I do to zucchini the same thing I do to squash and asparagus.

Couple tablespoons of minced garlic, some olive oil and a finely chopped vidalia onion. Cook the oil and onion until the onion is almost clear. Toss in zucchini cut into 1/4" discs (or squash), cut asparagus into bite sized pieces and add also. Let cook on low heat until asparagus is tender.

sometimes i boil the smaller ones sliced up with some fresh onions and eat them with a little ranch dressing on them. the best way is to batter or bread the slices and fry in oil in a big cast iron skillet maybe with some okra too.i like them added to cabbage stew or beef stew also.try them dipped in a little olive oil and sesoning and grilled. the squash bugs are killing mine one by one tho so i wont have them for much longer.

Cut them lenght wise, along with some onion and green peppers. Put them in a bowl, and marinate them with one of the following. Either worchester sauce, soy, or terryaki sauce. 3-4 hours in the refer, then lay them out on a sheet of aluminum foil. Sprinkle some seasoning on them, like steak or pork chop. If I have bacon, I'll cut up a couple slice's and put them in before wrapping it up. If not, I'll add some bacon fat to the mix. Wrap them up and put them in the grill for 45 minutes or so. When done, and putting them on the plate, sprinkle some parmasean cheese on top. gypsyman

I like them just sliced into coins.
Boiled, drained, and a little kosher salt.
Smooth and buttery.
MMMMM
Also like with sweet onions in a skillit like they do at the Japanese steak houses.
Butter, splash of soy and cook till the sweet onions are cooked through.
Either cook in about the time it takes for the 1.25" ribeyes to rest coming off the grill.
And go on Rice well.

I found a recipe I've got to try.  It is called zucchini apple pie.  There are no apples used in it but sliced zucchini with lemon juice and spices that those who have made it swear they can't tell it from the real thing.  I will take some convincing as I make a mean real apple pie. ;)

Slice zucchini, onions, red or green peppers, garlic and tomatoes. Saute all but the tomato; add the tomato last just to heat it up, and to produce some juice to add to the flavors. Right before serving, sprinkle liberally with parmasan cheese and cover for a few minutes with the heat off. Then serve. Add salt and pepper to taste. My favorite.

If you like cooking things on your grill try wrapping them up in foil and cooking them like you would a baked a baked potato. When they are done you can season them and add anything you like to your taste. I generally cook them on them on the grill for around a half hour before I cook the meat and leave them in the foil until the meat is done. We use ranch dressing, grated cheese, onions, butter, or whatever sounds good at the time.
