I do not own a .357 let alone the maximum but reckon that the killing power within the said range goes without question. You already know this from your deer hunting.
Yours may be more of a trajectory question...gotta keep that bullet low "say no more than 4" above line of sight at midrange" and printing dead on at the target range because you dont want to be shooting over the top of that yotes back at a range that is somewhere in between.
I am also well below speed on the .357 projectiles but do know something of their design. I might be corrected here but would think that if you compared the bullet with the worst BC number as compared with the one with the highest BC number, it may just not make that big of a difference if you are trying to squeeze out som extra yardage.
With that said, I would stick with your 180 gr loads and see where it prints at midrange as some re-sighting may be in order for this shorter animal with smaller vitals.
