Sweet sorghum juice

I've got a sweet sorghum patch and will be milling it to get the juice to boil into syrup.
 Just wondering, anyone ever try making a fermented drink of the juice without making syrup first?

I see no reason why one couldn't, would want to crush it well first like one would grapes, for the primary fermentation, strain and start second fermentation in another container.
Romans used to start a second fermentation on the original "must" or whatever you call it.
Sounds interesting.
