French grey is an acid etching process that provides very little in the way of rust prevention.  Still it is pretty and used by some manufacturers.  They normally coat the finished steel with poly or lacquer to protect from rust..  I've never dealt with the company you named..

Billy,
I had a Remington 700 adl frenched grayed by EABCO a year or so ago.  I took the gun on a moose hunt in northerm BC back in September.  The weather was non stop rain for 4 days and then snow for 5 days.   The area we hunted was thick with alders and very rocky in other spots.  The gun took a lot of abuse, was scraped against rocks, and I fell on it a few times on the wet rocks. The finish held up GREAT!  I am very pleased with it and would do it again on any gun I plan to use in harsh conditions.  The french gray finish is not as shinny as a standard ss finish.  The turn around time was only a few weeks.  While he has the gun, have him put an 11 degree target crown on it.  It greatly improved my groups.
