Left Hand actions for special build, advice?

I'm looking to build something a little different next year.  A left hand 303 Brit.  It is to honor my 5 Uncle's who served in WW2.  4 with the Canadian Army and one with Patton's Army (he was an in-law but we liked him even if he was an American).

They all saw action in Italy, Holland, Belgium and Germany. 

To commemorate thier sacrifice and the many fine soldiers that died in that madness I'm going to build a loose facsimile of a Jungle Carbine based on a left hand bolt.  My question to get this started is simple.  What is crap, crap but tuneable, better, best?  I'm hoping for actual experience and horror stories about the actions.

I'm leaning toward a Winchester 70 CRF.  The Mauser style action honors the other side too.  The Tika is out due to the style of the port.

I know that you can get the Savage action in left handed as their Striker actions are left handed.
