This is for a single batch:
2 lbs. Yellow Eyes in bags.
1 Med diced onion
1 teaspoon mustard
1/2 Cup Brown sugar
1/2 Cup Molasses
1/2 Cup Ketchup
1/8 to 1/4 Cup VT maple syrup ( we make our own ) or any real maple syrup may do. To your taste.
pinch of black pepper
3/4 lb of sliced salt pork ( I get mine fresh from the meat locker ) but sliced Hormel will do.
Soak beans for 12 to 24hrs. You can rince them 1 or 2 times. Then drain and boil the beans in fresh water. Let them boil so that they are not hard. (1/2 hr should do.) Then drain beans through a colander in a pan. Save the bean broth ( it will go back into the beans for baking & and rest for bean broth over bread if you like.) I put halve the beans in a roasting pan. Then add all ingredients ( except salt pork & maple syrup ). Then add the rest of the beans. Salt pork & maple syrup on top. Pour bean broth over beans to cover them. Bake in oven at 250 degrees for 9 to 10 hrs. ( I usually make my beans before I go to bed and wake up to the smell of fresh baked beans cooking ). You can leave cover on beans for part of cooking then remove cover to brown them up to your liking.
I got this receipt from a lady years ago, because when she brought her beans to a cook out they were gone in a flash. She gave me her receipt back then and I modified it a little to my taste.
Now when I make beans for the holidays or cook out I have to do a double batch because people want to take some home. My kids and grand kids all love them too.
My favorite is a cold baked bean sandwich with a slice of cheese.

My wife does all the canning of venison. She doesn't add anything to a full jar of venison chunks except for the salt.
It makes it own juice and comes out fall apart tender.
Sounds like you like to spice up most of your receipts and they sound great.  But my stomach needs a little more tender loving care these days. That comes with old age I guess.  ;D

I have never canned Vension. But I love making Jerky
I have never tried canned meat , sounds interesting ... oh unless Spam counts ? is that really a meat  ;D

Oh Spam. I love a Spam sandwich with mustard & fried Spam with my homemade Mac & Cheese. Just don't want to know whats in it.  ;D   Don't know & don't wanta know.  ;D
