ANyone know how to prepare an ORYX?

I was given both slabs or ribs from an oryx . they had a lot of meat on the exterior of them. The meat seems a bit slimmy from all the fat on them and is covered by a really thin layer of suet or skin like stuff.I have cut up the meat and frozzen it i watched it being field dressed properly and need a good reciepe . Plus can anyone tell if it taste good.

Try par-boiling the ribs.  First, chill them down in a fridge or freezer, and use a fillet knife to pare off most of the fat, it's like tallow, it don't taste good!    Par-boil for a good 40 minutes with salt pepper and garlic in the water.  Throw out the water while it is hot, to get rid of grease. Paint on a good coating of BBQ sauce and bake in a roasting pan, 300-350 degrees for 2 hours, or more.  Every half hour put on more BBQ.  When the meat is tender enough to pull off the bone with a fork, it's ready.  Should be great!  Let us know!!  :D

Thanks Jeff,

  I will have to try tha ,I gave some of the meat to some hispanic neighbors and they said they boiled it for a long,long long time before the fat would come off but that it was very tasty.

Well this might be to late for you.But it may help others.
Over the last 20 years I have recieved at least that many Oryx from the road kill list at WSMR.shot one huge one and my wife and pop who stays with me shot a couple huge ones also..
I have never noticed that much fat on them.was yours taken in N.M.??
Any ways they taste great.from hoof to horn from tail ta snout.we normally grill it and only use the beer mop on it.as it taste very good as is.But one of our favorites is to cut the meat in to small pieces, sear it real well in peanut oil browning it well.
then have a pot of red chile going.(N.M.)red chile.I normally use the frozen and get two milds and two hots and mix them.put the meat in and let simmer for 40 minutes.then make burritos out of it.if I am going to put it over rice.which is pretty dern good also.I will cut up a bunch of mushrooms and saute them and put them in the last ten minutes.

What's an Oryx? I looked it up, and google said it was an African antelope. How did Kyote get it as "roadkill" here? Is it really a regional name or nickname for some other type game?

Wikipedia has an article on them. They were released by NMG&F in Whitesands Proving Grounds and now number between 3000 and 6000 and can be hunted as big game animals. They are extinct in many of thier native countries. ear

There is only one wild herd of oryx in the states and it is in new mexico. they really seem to thrive there. they were introduced in the 60s i believe to a few different spots but the only place that held a healthy population was new mexico. they spend quite a bit of time on the white sand missile base.
