How do you prepare fresh water mussels for cooking? It seems like they'd be full of the yuckiest stuff in the river as they even eat bacteria.  How do you cook them?

You can say that about any bivalve from anywhere.  As filter feeders they will absorb lots of stuff.

Cook as you would any bivalve.
