I shot a nice young groundhog today.  Sweet potato thieving rascal! I am currently saving all the hides i get, coon, Groundhog, and domestic rabbit so I can learn to tan the hides. I have eaten groundhog fixed like pot roast, and It wasn't bad at all.  I wonder about Bar-B -q, or any other method?  Anyone  have any ideas? Special recipes that Are really good.  I hope to get more.   I can always fall back on BAR -B-Q.  Love it, and it is a pretty safe way to Cook any wild gem.  But if you have a stew or pie or, or , or,....I Love to find as many ways as I can to use Wilde game and even varmint.

docmagnum357, this isn't really a recepie, just a helpful tip.  Here in NE PA, groundhogs used to be eaten a lot more than they are today.
Being old enough to remember a lot of folks enjoying it, I wanted to pass onto you what my family does to make it more tasty.  After skinning etc, remove the scent glands under each front arm pit.  Looks similiar in size to a pea but more yellowish in color.  Also remove every speck of fat as it tastes nasty.  Wash the meat good and let soak a short while in salt water.  Next step is to put the meat into pot of cold water mixed with several cups of clear vinegar and bring to a boil.  Boil a few minutes and you'll see a pinkish foam on
top of the water.  Remove from heat and rinse again really good.  Rinse your pot good and add the meat again with cold water and clear vinegar again and bring to a boil.  When you see the pinkish foam again, rinse and wash again as described above.  Keep doing
the clear vinegar boil until the pink foam does not appear.  Next thing we do after the vinegar boil process is to now wash off again and cook in plain water until almost done.  Then we dredge in seasoned flour and fry in white crisco or lard until golden brown.  We serve it like that with fried potatoes and onions.  Or you can fry the cooked pieces in good old butter which is fantastic also.  Once
you have done your vinegar boil process all the gameyness smell and taste will go away.  You can than cook it anyway you like.  Make it BBQ style in the crock pot or just cook it up in the crockpot like beef stew or pot roast.  Groundhog is really good once you
remove the scent nodules from the the arm pits and boil a couple of times in clear vinegar.  During the great depression, (I'm not that
old), grounghog was a stapel for many rural folks as was any game animal.  Good luck cooking up future harvests of groundhog and
bon-apetite!!!!!!!!

We ate a lot of young groundhog when I was a kid. All we ever did was soak the meat in saltwater overnight then Mom floured it with seasonings and fried it like you would rabbit. Mighty good eating. Not sure what the purpose of boiling in vinegar is, I never heard of thgat before, we never had any problems. BBQ is good, old ones can be baked or put in a pressure cooker til the meat falls off the bone. Use the meat in soups, stews, mix it with mushroom soup and brown gravy mix. Nothing wrong with groundhog. POWDERMAN.  ;D ;D
