Jason,
The extra .001" in diameter of a jacketed 35 cal rifle bullet versus a jacketed 38 cal pistol bullet doesn't seem to make any different to my 357 Maxi. With the same powder charge, primer and depth of bullet in the case the .358 Speer 180 SP shoots 1900 FPS and the Hornaday .357 180 HP/XTP is 1901 FPS out of my Maxi Talo Trapper. One would suspect the larger diameter jacketed bullet could raise the chamber pressure but other things like jacket material, Jacket thickness, core composition, length of bearing surface etc. come into play. There are lots of folks shooting the .358" jacket in their Maxis and I haven't heard of an issue.
One thing to consider is the 200 grainers are maybe a bit heavy for the 357 Max cartridge. It would seem the general consenus for this chambering is the 180 grain bullet is optimum.
