Hello to all--haven't hunted squirrels in years but this year my granddaughter wants to try it, soooo-
my question is--if I remember a squirrel has 7 oil glands to remove, but I can't 'member all of them--
where are they? Thanks--woodsrunner

Only thing I've ever removed or known anyone else to remove is the hide, head and guts.

Animals have bilateral symmetry and this had me at a loss so I googled it...found a couple of great sounding recipes for squirrel.  :o

I cut off the hind legs and front feet with meat shears or a quick chop with a knife/hatchet.  Then there are (4) glands that I take off.  Along the inner thigh left & right and under the arm pit as stated above.  When gutting them and cleaning the cavity, the rest should come out, unless you are trying to save the whole neck, which I usually don't.  The neck contains 2 other ones I believe if you do.  ;)

My Friends in North carolina made the squirrel stew with the head on....a blue eye floatin' past the dumplings was funny! ;)

Organs found inside the body cavity like the gall bladder are glands, they come out when you gut the critter. The little lumps of tissue you find between the skin and muscle are lymph knodes. I don't ever remove them and they don't affect the quality of the meat. If you see them when you skin, they are worth taking a look at, because sickness often causes changes in the lymph knodes. If I saw unusual lymph knodes in an animal, I would probably throw it away, but I can't say as I ever have.

I have hunted squirrel's for 40 years and have never heard of this. If they have them they must not matter if left on when you eat them. :-\
