just been given a couple bighorn butterfly steaks....
no clue how to treat it! marinate and grill? schnitzle? pan fry? how do you cook bighorn? was good looking young mature ram weather was cool packed out same day....
suggestions?

Treat it like you would lamb or goat.  You can grill it, broil it, stew it.  Marinate, dry rub, or just salt and pepper, and maybe a little compound butter on it as it cooks. 

Just don't overcook it.

Sheep is a little strong for most folks. I would say to soak it in milk for a night in the fridge. Then soak it in a marinade from morning till you get ready to cook it. I like half moore's marinade to half water. I would just pan fry and stuff them with mushrooms and green onions cooked in butter. Maybe serve with some mini red potatoes covered with the drippings from the mushrooms and asparagus.
