Great luck with hardcast lead.  I load my own 165gr, but I am sure that anything from that range up would work as well.  Better velocity than you can get with the jacketed slugs and they will punch through a shoulder (or both) within 50 yards.

Ihavent used the solid copper bullets in any of my hunting hand guns...

My fav 357 mag pistol bullet is the Speer 140 HP with a still load of H110.. Excellent penetration and expansion form my 8" barrel Colt Whitetailer.

For me, I like Federal Fusions 158 grain JSP. They have worked for me in the past.  ;)

...revolver with 6" barrel.

If the deer are 150 - 200 lbs on the hoof then I'd opt for a standard lead core HP/SP of 140 - 158 gr at 1350 - 1450 fps. If the deer are smaller then I'd opt for a 125 XTP?FP at 1500+ fps.
I prefer a soft cast HP 358156 at 1400 out of my 6" 357 revolver but the Hornady factory loads of the 140 XTP would be my choice there.

BTW; my choices are for broadside or raking shots puting the bullet through the heart/lung (not "behind the shoulder").  I also don't do Texas heart shots.
