1 bear ham, smoked(8 to 10 pounds)
1 teaspoon allspice
1/2 cup honey
1/2 cup maple syrup
1/4 cup dried breadcrumbs
1/4 cup hazelnuts, finely chopped
Remove rind from the ham, being careful not to remove any of the fat. Using a sharp knife score almost through the fat. Sprinkle allspice all over the ham. In a bowl, thoroughly mix the wild honey, maple syrup and bread crumbs. Smear the glaze all over the ham and place the ham on a baking dish in a 375 degree F. oven for 30 minutes, basting occasionally. Remove the ham from the oven, ice with heavy coat of glaze sprinkled with hazelnuts, then place the ham back in the oven at 425 degree F. for about 5 minutes to set the glaze.
