Throwing a Batch together this Weekend

I have frozen berrys left over from this past growing season and I think I mix up a batch this weekend.  It should come out to not more than two - 1 gallon jugs.
 
The mix will approximately be :
 
50% Elderberrys
 
50% mix of  Red Current, Alaskan Thornless Blackberrys, and Gooseberrys.
 
I hope this concoction turns out ok.  The only problem is - is if turns out ok, I wont have a regular recipe because it is made from leftovers.

Great!  Gets me all fired up!   ;D   Now tell me, do you just use the juice or do you leave the pulp in for the primary fermentation?

  jvs,     Your blend of berries sounds good to me.   I grow red, white, black currants, blackberrries, red & black raspberries,beach plums, sand cherries, chokecherries, chokeberries ( aronia ), blueberries, josta berries all for wine making.
 I mix them in various amounts and make different blends every year depending on how many I get and I think most red fruits and grapes go together well.
 I differ in my tastes in wine as I make all of my wine very dry,  most people like there fruit wines to have a little residule sugar as it makes the flavor of the fruit distint.

Write down the proportions of berries and ammounts of the rest. If the dump mix comes out good it won't be leftovers, it will be a new recipe. If it isn't exactly what you wan't you may be able to "adjust" the blend. (Will that make you a vintner?)
 
My son always tries out new "mixtures of seasonings" while cooking but he never writes them down. He can never repeat them exactly. He doesn't see the benefit of writeing it down. Had some real good turn outs but can't duplicate them. He sure is hard headed. Can't figure where that comes from. ear

I will be juicing this batch, since they were frozen and I can be almost sure to get all of the seeds out.  Which will make it alot easier later on as it goes right from the jug to the bottle after settling.  It should make a good Christmas wine next year.  ( if the world doesnt end on 12-21-12 ).
 
I will consider this just a fruit punch type of thing with no real recipe.  (pot luck)
 
I could weigh the berrys and write them down, but half of the fun for me is to go with what I have until I try it again next year, and take what I get.  It sounds like a good mixture, but we'll see...
