 Anyone ever tried maktak? Sourdough I'm sure you have. It is pronounced muktuk. A coworker met someone from northern Alaska, who gave him a piece of Maktak. Its the outer layer of a whale, including the skin, and a few inches of the fat. The black part(skin) was about one inch thich and the fat was two or three inches thick, and its kept frozen, because in room temperature I guess the oils in the fat liquefy. I guess its a delicacy up there when the Eskimos are allowed to kill a few whales each year, for each village. I did try a piece, and I would have to say, I would have to be pretty hungry to eat it. I guess it kind of had a raw fish taste, and the skin was pretty tough.

No, I have not tried it.  Never been around when a whale is being butchered.  Was offered some during the Eskimo Indian Olympics here in Fairbanks.  The smell was enough to stop me.

When I was working the Muskox project on Nunavak, we found a walrus that had washed ashore.  The men pulled it above the high water mark and left it.  Temps were around zero so no worry about it spoiling.  Two days later we were back on the south side of the island, planning to spend the night.  After we finished work that day the men went to the Walrus and started butchering it.  The Vetranerian  I was working with, grabbed my arm and said "Rog, we need to take a walk, a long walk".  I asked "Why".  He said, "If we stay here they will offer you some of the raw blubber, if you eat it you will wish you could die.  Our systems will not handle it, and it will make us sick".  So we went for a long walk.  We stayed out till most of the men had gone to bed.  Luckily I was tired that night.  Remember waking up to go pee, and realized how badly that dugout reeked.  Near morning the gas got so bad Dan (the Vet) and I got up early along with some of the older men.  We went outside and fixed breakfast.  Some of the old men went to the sleds and cut off some of the Walrus meat for breakfast, and offered us some.  We told them we liked our Mt House.  We did try some of the meat once it was cooked.  Was not bad, I think it was just the idea of watching the men eat the fat raw the night before that caused us not to want more.

I just assumed you had tried it, being from that neck of the woods. Don't blame you for not trying it. Probably good, you agreed to go for the long walk. I have a really hard time believing anyone would consider it a delicacy.

The guy I work with who was the one the maktak was given to, is the type of guy that will eat anything if someone tells him its good for you. On the other hand he won't eat beef or pork because it has some fat in it. I and one other guy were the only two to try it besides the guy who got it. I don't know how the stuff could be good for you when it tastes like it does. I would rather eat a piece of shoe leather. What was left of it, he said he was going to take it home and cook it with his eggs. I asked him why he was going to ruin perfectly good eggs.

From what I understand they harpoon the whale directly behind the blow hole. It has an explosive tip which blows up the lungs. What I was told is that nothing from the whale goes to waste. They use everything. From the pictures and captions, that appears to be true. Its amazing they hunt whales in those little boats. I would have to guess that those are some pretty tough people. 
Rex do you like the taste of the muktuk? I'm sure there is food that we in the lower states find very good. The Eskimos would not like it. I'm sure if we were raised eating stuff like whale blubber. We would also say its good.

I'd say the Onalik was the most tasty dish as I remember even outsiders take to it, hot fresh out the boiling kettle ;)
Allot ther other stuff is kinda a aquired taste.
My Father in Law related as about his youth in Barrow, he'd run dogs and would suck on a quid of Blubber as energy while on the trail, A good eskimo never rides the whole way on runners.

Once Meat is froze Inuit dont recomend cooking it, they claim cooking only makes it tougher.

Eskimo useally get pretty free wheeling when its time to clean out the Sigluaq all last seasons Muktuk is doled out to friends and family to make room for new batch.
My guess is if your was a stranger to the Inupiat, The Gift Muktuk may have been old stuff from the back the Ice Cellar.
