For hunting the 30-30 is the easy choice for me, especially for big game. It is effective at much longer ranges than the 44MAG would be. I'd opt for the octagon barrel, steel for hunting, brass otherwise.
If your hunting is at shorter ranges the 44 could be a good choice if you also have a 44 handgun to back it up though, and can stand the gaudy engraving.
"Deluxe" doesn't fit for me on a saddle carbine after growing up on a ranch with all the old Winchesters and a couple of real Henry's. They were tools... reliable work guns, not foofarraw or gewgaws.
(I still have my first '94 made in the war years, kilt my first mule deer with it in '54-'55).
