Ramps/Leeks

Went out for a walk this morning. Ramps are up and growing. I'll be picking some by the end of the week, or early next week. I can taste the home fries with ramps already.

A friend of mines brother, would give him for a birthday present every year a gallon jar of the bulbs pickled in clear vinegar and salt . Man you couldn't stop eat'n those things, they were X-C-LENT.
I've always wanted to do the pickle deal and to dehydrate the greens and use in everything.

I'm not sure how you react to eating them, but if I eat to many ramps I may be sleepin' on the couch....if ya' know what I mean?
 
Do you have, or can you get the recipe for pickling the ramps? I may have to try that instead of just freezing them.

The best that I remember was to use only clear vinegar and a good dose of salt. Tell you what they are good. They have the onion taste and have a slightly hot spice to them also.

I went out to dig some ramps this morning. I'm going to let them grow a little longer. The bulbs were only a little over a ¼" round. I'll check back on them next week.

i just picked a mess of them yesterday. luckily... mamma likes them as much as i do!!! so she cant move me to the couch!!! ;D

I'm going out tomorrow to dig some, and my wife is going to pickle them tomorrow evening. Does anyone have any canning, or other pickling recipes for ramps?

Western NC used to have a ramp festival.  Ramps come off about the time our political primary is held.  Politicians all came to the festival to make speaches.  Word was that ramps were so strong that after a speaker ate some, he could not tell a lie.
I don't think our elected officials eat ramps anymore.
