i figured some might not want
me to tump over carts

so
i'll post this separate from the yeggs.
i haven't had to change anything for
these. this started as an experiment
to make up pickled smoked sausage,
but i was put off by the thought of
maybe having to dump out a batch of
ruined expensive sausage. with that in mind
i bought several packages of the .76 cent
cheapy hot dogs and used those for my
guinea pigs. i use the same recipe as the
eggs on my post of 14 may. one pack of
eight is about right for a 16 oz jar.
16 oz jar with the tsp pickling spice, tsp
black peppercorns, tsp crushed red pepper,
tsp minced onion, tsp minced pepper, etc.
leave out the salt. dogs get the ends clipped
off and halved to let the solution in better.
stacked in the jar, and the vinegar and a
few drops of red coloring go in.
these turned out so good, i never tried to
do it with the sausage.
