Ambidextrous Safetys

How does the 1911 safety come off when it has a thumb piece on both sides of the frame?

on the right side the thumb safety is held in place by either a tab that fits under the right grip or and extended sear pin with a groove in it that the safety has a short tab that fits in it. Once the right side is off the left side is removed normally.
