Antelope Jerky

 ;D We are making  last year's buck antelope in to jerky...Right now the smoker is rolling out smoke....in 5-7 hours the jerky should be cooling ..... It is easy to do..we just soak the cut up meat in tender quick, natures seasonings and black pepper for maybe 3-5 days in the fridge..then precook at 375 degrees for 15-30 min.  cool and pop into the smoker..good stuff, it will barely last til this year,s antelope is hanging in the shed... :-\

I've had good results with antelope going with sweeter recipies than I would use for deer, elk or birds.  The meat is so mild, and sorta naturally sweet anyway.  I usually do something with pinapple juice or brown sugar, or both...  No need for the strong flavor that you need to deal with, say, a canada goose...

 :) We have tried the sweeter jerky also...some was so sweet it could be used like ham for breakfast...but for our tastes the antelope has a stronger flavor than either deer or elk..could be just us, or maybe where the antelope were taken...good stuff either way..
