pancakes
« on: December 01, 2012, 08:34:15 AM »
Something we all enjoy;  breakfast.

My formula is 1 or 2 eggs, oil, buttermilk (lots at high altitude), a litttle sugar, a bit of corn meal, whole wheat flour or buckwheat depending on mood, and unbleached white, baking soda, baking powder, a pinch of salt.  Sometimes I also add some apple sauce into the mix.

Lots of butter, real maple syrup if you can afford it, (this years is not real good).  My usual syrup is brown sugar and Maple flavoring, as that what I grew up on.  Put it on hot.  I know some of you will have your own tops, depending on who raised you and where.  Another favorite is to make apple syrup from the peelings from pie apples, that way little is wasted.  Blueberries, or blackberries also make a good syrup.

I put any extras in the fridge and then take them to work, along with an egg, one each day.

I'm of another school. Self rising flour, an egg or two, milk or half milk half buttermilk, sugar (and I have started using a bit more over the years I found they brown a bit better), and oil. Fairly thick too, and about 7"s across.

Honestly they are fairly simple in taste, I will guild the lily on occasion but kinda like a plain jane pancake. Fast and simple being the main criteria, cheap being a close second.

Try adding a little bit of honey and rum to your mix.

Kenny,

Except for the buttermilk (wife can't have dairy) and if you ad some steal cut outs your recipe sounds a lot like my wife's.

Then after she pores them onto the griddle she adds chopped wall nuts or pecans and sometimes dark chocolate chips or butter scotch chips on top of the pancake before flipping them.  These last items are not added directly into the mix because they will sink in the batter and you won't get an even distribution.

Learned a new way to make pancakes today from a boy scout.  His mother got him one of those bottles of pancake mix you just put water in and pour into the skillet.  The only problem was he poured the WHOLE bottle at once.  :o

Put the CAKE in pancake... :D

Krusteaz buttermilk pancake mix.  ;D just add water & stir it up. Pour however much into a hot skillet to make the size you want. Repeat as needed. Fry two eggs & put on top then cover with mrs. Butter worth syrup.  ;)

I have several scratch recipes but the only one that beats the above is my sourdough recipe. It requires a crock of sourdough starter which my wife forbade me to keep in the house years ago. She said it smelled bad.  :o

Glad I was too busy to read this last night. Now that it's morning I'll fix some breakfast and not feel guilty. ;D  Well I probably really wouldn't have felt all that guily... ::)

PANCAKES! One of, if not my favorite, breakfasts. Wife makes 'em and I eat 'em. I don't have a clue how she whips them up and don't care as long as she does.

I REALLY DON"T LIKE to cook so I'm not interested in knowing what she uses. If I had to COOK  :'( I would live on cheese and crackers and granola bars. That should explain just how much I REALLY DON'T LIKE to cook.  ;D

Make mine silver dollar pancakes a little light on the baking soda so they're not so fluffy. Mix the syrup with strawberry jam and fresh (or frozen) blueberries. Fresh fruit and milk on the side. Coffee afterward. Bacon or sausage links not necessary but always welcome.
