cabbage soup

 Anyone have a cabbage soup recipe that has beans or other protien low carb ingredients for a diet soup. I have one for a bean  with a tomato soup base but I want something for variety. The cabbage soup that I make has onion soup for the base. thanks . ear

i make cabbage.
i don't know that it would be classed
as soup.
one head of cabbage-sliced up thin
one large onion or two med-diced
1 1/2 tbs finely minced garlic
2 large bell peppers diced
1/3 tsp celery seed
3 stalks minced celery or 1 tbs dried
1 lb mild eye-talyun sausage or
something to substitute(ground venison?)
1 tsp tony's or old bay or spice to taste with?
2-3 tbs olive oil


oil in pot - brown sausage,onions,garlic
add cabbage and rest of stuff, 1/3 cup
water to prevent burning, cover pot ,
low-med heat, check and stir every
5 mins, cook until everything done


had some a few hours ago.

R99, thanks that sounds good. I might add extra chicken or beef stock or onion consume as the liqiud to make it have some  soup to it, if needed. ear

it is purty good.
i accidently came upon that trying to
duplicate my buddy's wife cabbage
recipe that she wouldn't tell me
how to make.
only one problem i know of.
i eat way too much of it. :(

First - beans are NOT low carb.  Half a cup of white beans, cooked, has about 28 grams of carbs.

Now,

Get some olive oil heating in your pot, chop up an onion or two, add to pot, stir it a bit.  While that is going, chop or slice up carrots (stir the pot) and celery.  Add to pot, stir.  Grate in some garlic, as much as you like.  Stir.  Chop your cabbage (stir the pot several times while doing that).  Add to pot and stir.  Add water or beef or chicken stock to cover by an inch or two.  Add your soaked beans, or canned beans (I like navy beans, but just about any other than black will work - black too, if you don't mind a funny color).  If using canned, go ahead and add your salt and pepper now, otherwise wait 'til the beans are cooked, then season.  I like dill and thyme in my cabbage soup.  Also a touch of tobasco and some cider vinegar.  A bottle of beer into it doesn't hurt either.

You could also use split peas or lentils. 

Also, look up borscht recipes - real peasant borscht is basically cabbage and beat soup, nice and chunky, not the thin blended and strained stuff.

My pleasure.  We got a shock about the carbs one Lent when we went from using meat to legumes for our protein. My wifes blood sugars went sky high.  Then we read the nutritional info.  Went back to eating meat, just not as much.

Yep, If you don't have DM and you eat the slow carb soup for breakfast you will have a sugar crash, (hyypoglycemia),  about 10 or 11 in the AM. Weak, sweat and grouchy. Have to get more soup or protien pronto. It works for a lose weight diet but you have to eat more often. ear

This worked for me:
 
Cabbage Soup
 
 
 
I medium head cabbage cut into 1-1 Ό squares
 
  Slice core thin to 1/8 “ slices
 
1 medium rutabaga turnip (purple top if you prefer, less flavor)
 
   Cut into 3/8 “ cubes
 
 
 
2 - 12 oz cans white or navy beans rinsed (don’t rinse if you want a thicker broth)
 
2 tsp caraway seed
 
Olive oil
 
Small onion sliced
 
1 can condensed oniom boulion
 
2 can condensed beef broth
 
Salt & pepper to taste
 
1 package of Johnsonville mild Italian sausage cooked and sliced to 1/8 ‘ slices
 
 
 
Dirrections
 
Put large boiler of warer on bring to steaming and add cabbage and turnip, oil, salt water liberally
 
Bring to boil and cook 5 minutes. Drain in colander.
 
Put condensed onion and beef broth and 3 cans water into boiler and bring to steaming.
 
Add more oil
 
Add cabbage turnip mix, caraway seed onion can add dried minced onion also.
 
Sliced sausage and drained beans.  And caraway. Add salt and pepper if needed.
 
Cook until turnip begins to tender
 
Serve with toasted bread with basil pesto spread.

my ex used to make a similar cabbage stew but added a lb of cooked bacon and carrots.OMG it was good. not good for yu but gawd it was good eating!

oh i hear ya ear!me too.me and my ex had a lil blow out when i came in from werkin and caught her scoopin out a 1lb tub of sour cream into a batch of mashed taters.i honestly think she was trying to kill me with her cooking.
