The flip side of that is that Mexican cooking (it's a huge cuisine), can be very healthy and very flavorful, and it's not all peppers and tex-mex looking food. They can be so simple, and not salty either. Like a good chicken tortilla soup made without the Taco Bell treatment.
Funny story about the best Mexican restaurant I ever went to. Was in Yucatan. I had supper and they had Margarita cocktails available. I ordered a small one and it tasted like a decent Margarita. Fruity, not alcoholic tasting. It was about the size of a standard wine glass. I had to sit there a long while because they must have had a huge amount of tequila in it. That little glass probably had three times as much alcohol in it as a big USA Margarita. I could really feel that one and was afraid I'd be staggering away. Took me quite a while to get my composure. The food helped.
