What to do with green tomatoes

What do you guys do with leftover green tomatoes at the end of the year? Make hot sauce? Salsa?

We have a couple of old styrofoam coolers and right before our first freeze we pick our green tomatoes and store them in the coolers in a cool dark place. They ripen over time and we have had tomatoes into December and January on occasion.

I had a semi ripe tomatoe today with blue cheese dressing. It was mighty good...

JMHO- I only use ripe and overripe tomatoes for
my salsa.  No fruit

Obvious to some my friend. But not me and that is why I’m asking. Never heard of chow chow or green tomatoe relish.

Well if you like peas or butterbeans, either
is a must have
I don't know the recipes verbatim, but you'd
need your maters, a cabbage, onions, white
vinegar, sugar, mustard seed, turmeric, uh. .
uh. . Can't remember what else
Some clean jars and lids of course

Wrap them in newspaper and store them in the cool dark basement; I have acquired a lot of styro-foam coolers this year, I may try using them.
