Boy, was I surprised

Our son put in a garden this year. Due to some mechanical problems it was pretty late but the yellow squash and zucchinni are making to beat the band. I like zucchinni bread and the wife has made a large supply of that. I really don't care for yellow squash at all in any form of that I have ever sampled but yesterday was different. At lunch my wife asked if I wanted to sample some fried squash and I mosied off to the kitchen to take a bite and say I really didn't care for it. That's when I got the surprise. She had chopped it into bite sized pieces, rolled it in corn meal, and fried it. I love fresh okra fixed like this and the squash is just about as good as the okra. I ate a pretty good sized bowl of the stuff and am eagerly waiting on the next fixin'.

This is an exceptional year for squash or any vine veggie.
My vines are huge to the poiint now I have to go out and cut them down or they will cover the entire garden eventually.

I have a very fond feeling for baked winter squash; bake it with a lot of butter and brown sugar or Maple syrup and it is a treat.
I used to also really like baked squash with just salt, pepper and a lot of butter but I rarely eat it that way now.
It has been a while since I made a home made pumpkin/squash pie but I think this fall I will make a few again.

A lot of people now cut the squash into small pieces and then cut meat off of the rind and cook it that way but I still like to just cut it in half, scoop out the seed and fill the cavity with butter and sugar then bake it.
Used to eat a LOT of zucchini bread as my sig. other is beautician and her old lady customers used to give it to her often but now it is a rarity, as they are dying off.
