I have a Bushnell Elite on mine and like it very much.  I have never owned a red dot scope so I can't say much about that.

The 7m08 is ok but the 308 is better. 8)

I wasn't going to order another barrel for the Encore this year but the 7mm/08 should be here by the beginning of next week.  Can't wait to try her out.

I have a 7mm-08 SS on my Encore......really like it, getting ready to put a Burris 2x on it....15"barrel

7mm-08 is an excellent handgun cartridge. max load with a 139/140gr bullet in a 15" barrel will yield 25-2600 fps. my magnum research lone eagle will fairly easily do 3/4" groups, with regularity. my load is 42.3 gr of IMR4064 with a 139gr hornady SST. this load has and will ruin a whitetails day.

The 7mm-08 is a great cartridge in a SP.  You could easily go to 300 yards and take deer with it.  I would choose it over the 308 for deer sized game.  I would even choose it over the 308 for LR shooting and use the 162 A-Max.

I have used the Encore handgun in 7-08 since it came out for many game animals. The 130 gr Speer boat tail is a great deer /hog bullet in this caliber. I have used it many times over varget and H4895 for years with great success . Other good one's in this handgun are 120gr nobler ballistic tip,130 gr Speer flat base,139 gr interlock regular boat tail and SST. I have had the best success with the 120 and 130 grains with H4895 and Varget for deer ,hogs, and bear. Hope this helps you

I have taken deer and hogs as far as 300 yards with my 7-08. However, I have hunted with a handgun most of my life with a lot of trigger time behind the gun at 69 years old. You must practice a great deal and only shoot as far  as you practice. A handgun is not as forgiving as a rifle. Advice is start close and increase distance with your ability. This is not to discourage you but in hopes you will spent the time with the handgun. Factory ammo is great but reloading is wonderful also in this caliber. Hope this helps you.
