Pork and Gator!

Having my son's graduation party this Saturday.  8 pork butts, a smoked pork belly and a whole gator on the menu.  Pork butts went in at 6 am this morning, belly and gator will be smoked on Saturday.

99% of all Lawyers give the other 1% a bad name. What I find hilarious about this is they are such an arrogant bunch, that they all think they are in the 1%.

Mukwonago, Wisconsin - come on over!  Butt's came out perfect!  Today is bringing gator and pork belly for Saturday smoke and the 4 chickens, one for the gators mouth...

What does gator in a basic way taste like; I have had turtle and to me it , for a comparison was in the class of dark meat chicken or duck.

I've never done one yet, but from what I've heard more like pork loin than chicken...

Well swing on by!  Got the gator in the brine and did a couple test chickens on the borrowed smoker to see how to work it.  Tomorrow we will see if I can pull this off!

I got the gator from LA Crawfish Co.  I used to get crawfish from them every year for a boil but DNR won't let them ship live mudbugs to Wisconsin anymore.

Gator turned out great, everyone who was willing to try it (which was almost everyone) loved it and it was gone in no time.   Very clean, tender flavor.  I would compare it to pork tenderloin.  Did pork belly burnt ends and they were excellent as well.
