just canned two big batches last week. Had a LOT of beans so i figured with the world like it is im better off with a bunch ready to eat rather then have to cook them over a fire. I called this batch survival beans. Pintos and great norths half and half with bacon and sausage and i did some looking and it said on the internet that one thing beans and rice is lacking in is vit C. So i actually took a hand full of vit c tablets and tossed them in the pot while they were cooking. Tried both batches and you couldnt taste them in it. Next time i might toss some multi vits in there too. Ive probably got 50 quarts of beans canned right now.
