I am not a person who is a culture epicure concerning food.  As I have often said.."I eat to live".

   However there is one exception, wherein I have a delicate taste, that exception being cheese.

  More succinctly...Cheddar cheese.    Cheddar was developed in the small town of Cheddar in southwestern England, and produced there since the 13th century. 
   Their cheese industry was aided by numerous caves in the area, which of course are still being used in the curing process.
  States such as Wisconsin, New York and Vermont, produce some exquisite Cheddars.  Each Cheddar has a character of it's own..it's aroma, it's snappy taste and mellow flavor.

   There is a large cheddar manufactory in a town about 25 miles from me..  However, my son was just contracted to do drone videos of a new plant they are building and will be moving to, which is about 3 miles from my house.
    They make a fine, award winning Cheddar...but it is not my favorite..

  My favorite is produced by a small concern called "Golden Age" cheese, which is about 45-50 miles from my home. It has a mellow, slightly smoky flavor..with a somewhat crumbly texture..simply the best (IMO).  The Amish supply much if their raw milk.

 Anyone else have a "Cheddar thing"..or favor any other cheese?

Golden Age is a very small factory..see painting.. They are not at all like the big cheese factory that bought 250 acres near me to build their new plant. ..And their very small town of Woodhull, seems to be struggling from the effects of the Covid shutdowns.

  Last I knew, they had cheddars aged up to 11 years..I prefer the regular age cheese though.

  I guess i should give a plug to the "big guy" which is moving near me.  Don't get me wrong, the big guy produces some great cheese..just not my favorite.

  I think you will recall when we were speaking of Mac & Cheese frozen dinners, I mentioned I saw Stoffer's trucks pulling in and out of their plant, which is presently located at Friendship, NY.

  Here is an old announcement, which is now changed..the new factory will be just about 3 miles from my house, instead of being built at Amity..

I rarely go now but my cousin and I used to often make  cheese excursions each year into Wisconsin.

We would find and stop at places, often where it was made and buy pound of fresh, squeaky teeth fresh Cheddar or Colby, now we also stopped at places for smoked sausage and what ever tickled our pig-out bones of the moment.

Colby Wisc. was what got the  ball rolling years ago, as that was where Colby cheese was first created, sadly the butcher shop and cheese The store/coffee shop that got the ball rolling are both gone now, so we no longer go to Colby, Wisc.

This coming spring/summer I/we are going to try to get to the three cheese makers in Minnesota where you can get fresh Cheddar, again squeaky fresh, and due a cruise into Wisc. that also has a gun shop along the way we stopped at several times six or seven years ago.

Bongard's Creamery, in Bongards Minnesota sadly has stopped making Colby, and we used to go their and get it from the Creamery store for half of what it costs in a grocery store.
IF I/we, my other half like to stop at such places when we go on a trip, take a trip out east, Penn., Ohio, Indiana, I am going to look up online cheese makers and try some. 8)

There was a family from somewhere up north that moved here and put in a cheese factory including a small store in front where locals could stop in and get their cheese fix. They made a variety and I liked them all. The store part only lasted about two year and it was closed and just a few years later the factory shut down. The town fathers basically lied to them about the water and milk supply available. The city guaranteed their loan and was stuck with it. The facility sits there unused although the city has managed to sell a small amount of the equipment. The city manager that brokered the deal got a million buck bonus from the city, retired, and built quite a fancy retirement home in Colorado. 10,000 city residents got the shaft and now we all get our cheese from a grocery store. At least I'm not a city resident whose tax dollars were wasted.

Oh Yeah...fresh, warm curds that are rubbery...and squeaky on the teeth!  The best way to eat them.

   A few years ago, a new venture was started about 35 miles from my home.  It is at Perry, near Silver
  Lake, NY.  It is called East Hill Creamery..for it's ocation atbthe edge of the small town.
   
  It is good cheese..somewhat like Cheddar...but still something French.. I still prefer golden Age.

  Their process requires caves for ageing...so what do the do on a level lot?  Well, they built a hill right behind the creamery...and put caves in it !

    They should have no problem with milk supply, since they are in Wyoming County..which has far more cows than it has people..and they are centered in the greatest concentration of dairy farms.

   Silver Lake as the lake near me, is somewhat unique, in that it's inlet and outlet are on the same end of the lake..

I used to work with 2 gents from
the chah-kah-go area that always
mail ordered cheese from some
small cheese shop either in or
right by wisconsin, and I got on
an order with them one time and
bought several different kinds
they recommended.  I can't recall
exactly what each variety was,
but it was all some of the finest
cheese I've ever had.
I wish I could remember what the
place was and exactly where they
were located

Being life long Wisconsin residents we sometimes take cheese for granted. UNTIL... we travel a few states away. Cheese out west has no taste, east is better but not like home. Colby cheese (especially Colby longhorn) is some of the best. Our local cheese maker (Carr Valley) claim to fame is aged cheddar 1 to 12 years. I prefer 6-8 year old it has good flavor and less of the white crystal lines that I don't know the term for. Curds are good from almost any cheese maker as long as they're fresh and warm. The local health dept. was trying to make store keepers refrigerate the fresh curds, that normally lay on every counter of every gas station I know of, but folks are having none of it. If they're not warm and dripping in whey they're old.

I might add Carr Valley cheese ships anywhere in the US I believe. I don't work for or have any interest in the cheese shop, just think it's some of Wisconsins finest. They have a website.

Im from michigan so this is hard to say but real cheese comes from WI. we always stop at the cheese store my Marinette to stock up when were comming home from green bay. Got to have my cheese curds and some colby and chedder. My favorite is colbyjack.
