Progress on Great Lakes Cheese plant
« on: December 10, 2022, 01:28:49 PM »
Earlier in the year, I mentioned the new cheese plant being built about 3 miles down the road from my house.
  Here is the current progress.
They have a concrete mix plant right on site.  As I mentioned, there is a 235 acre site.  That which is not being used as
actual manufacturing area..runs up over the wooded hills behind.

Those stainless steel items that look like oversized Apollo space capsules (concrete truck parked near) are the curd cookers..waiting to be installed.

Pilot flying drone from silver van centered in last frame.

Seems like good progress to me.  https://www.youtube.com/watch?v=VH3HaUHjDjI

The national home office of GLC gets a new drone video each week, documenting progress of construction.  This relatively new observation tool saves much travel by a team back and forth from the home office, plus they have a
visual running record of the project.

Nicely done.
That seems to be a very large facility.
I was interested enough to look a little deeper. GLC makes a LOT of cheese. There are two other plants in NY….Adams, NY and Cuba, NY.
Are they anywhere near you, IG?
In addition, there are plants scattered across the country….lots of cheese.

Yes, the Cuba cheese plant has been operating in Cuba NY (about 25 miles from me) since the late 1800s.  In recent years they moved their cheese making to a nearby town of Friendship, while keeping their retail shop in Cuba.

Originally just Cuba cheese, a few decades ago they were bought out by Empire Cheese..then more recently absorbed by Great Lakes.  All their cheese making operation should be going on in the new facility by 2025.

My son does the regular weekly video for them..not cheap, but less expensive and troublesome than flying a weekly delegation here to check on the project.

He started the whole job when he heard that Great Lakes was considering this site , among others.  Having
worked with the county industrial development people before, he offered a free drone coverage for them to present to the Great Lakes executives..which they included in their presentation.

Once the site was confirmed, it was a natural for GLC to contact my son for their weekly video.

That seems to be a current trend now days, individual farms starting their own enterprise...somewhat like the mini breweries cropping up these days.

There is such a place about 25 miles from me, over near Letchworth State Park.  They wanted caves to cure their cheeses in, so they built a hill behind their small plant...then dug caves into it !  Their cheese is not cheddar, but some French variation..delicious in itself (slightly smoky), but still not cheddar.

Top photo in link shows the curing caves interior.

Went out with my son just this morning on a drone job, and we picked up some curds at a country store.  Seems the name of that farmer who owns the cheese factory is Stoltzfus.  Now, the only folks around here that carry that name are Amish, so they are likely Amish, or at least, breakaway branch.  They are located in Vernon Center,  in central NY up near Rome.

Ranchers are also opening their own packing houses, and stores selling their own beef instead shipping it to big packers like National Beef and other major beef packers who've been cutting prices to beef producers.

My sister bought half a cow and the round was better than most top sirloin. I was pleasantly surprised as it was very good. She gave me a box of steaks. Now that’s love :)

Direct from farmer sales..   ..May become a new practice..or rather an old practice, brought up to date.
