I got this from a friend back in about 1991. I tried some of his and it was great. Try a batch and adjust cook power and time for your microwave so the meat isn’t overcooked and hard. It turned out a little hard the few times I had it and it may have been from a bigger more powerful microwave oven than when this was developed. People I have talked to say they slice the meat to about ¼ “ or more based on preference or what works for how they already make jerky. That will also affect how it cooks.
Jerky
½ cup Tender Quick
5 cups water
2 teaspoons pepper
2 tablespoons worchestershire sauce
2 tablespoons soy sauce
2 tablespoons Heinz 57 sauce
2 tablespoons A-1
1 tablespoon Tobasco sauce
1 teaspoon garlic salt
This is enough brine for a 9” x 12” cake pan filled with sliced meat. Marinate for 10-12 hours, drain well and soak up excess fluid from meat with paper towel.
Cook in microwave for 20 minutes total. Cook 10 minutes on high and 10 minutes on medium or until meat is done to your liking. Drain off liquid as you cook. A bacon pan can be used and salt and pepper as you cook.
